inRL Meetup & Stuffed French Toast {Monday Meals} - 2013-04-29 17:36:12-04
A few weeks ago I wrote about friendship & community. This past Saturday, several women joined Susan Huffman & I for coffee (& stuffed french toast & chocolate dipping station) to talk about this very subject.
Susan is one of my dearest friends who has “stayed” with me through thick & thin.
We watched a video about mentoring that inRL produced. It was a great catalyst for our discussion. Since Saturday, I’ve been thinking alot about mentoring, what it looks like, how to find a mentor. Over the next few days, I’ll share what God is teaching me.
In the meantime, let me share some pics from Saturday’s meetup and my recipe for Stuffed French Toast.

We rolled kraft paper down the table as a table cloth. Writing on the kraft paper was so much fun. I wish I had seen this idea when I was hosting kids’ birthday parties.
Susan made chocolate ganache so we could dip fruit & roll in toppings. It was so much fun!
And here’s the stuffed french toast…
Yummy goodness … with cream cheese mixture between 2 pieces of toast and pecan sauce all over.
Pour pecan sauce on the bottom of the pan. After making a cinnamon-cream cheese sandwich, arrange 6 sandwiches in a 9×13 pan. Drizzle remaining sauce on top. Pour egg mixture all over. Bake…

Ingredients
- 12 slices of bread (I used whole wheat)
- 8 oz. softened cream cheese
- 6 Tbsp cinnamon sugar
- 1/3 cup butter
- 3/4 cup brown sugar
- 1/4 cup maple syrup
- 1 cup chopped pecans
- 3 eggs
- 1 cup milk
- 1 Tbsp vanilla
- 1/2 tsp nutmeg
- whipped cream (optional)
Instructions
- Melt butter in microwave. Stir in brown sugar & maple syrup until smooth & creamy. Add pecans.
- Pour pecan sauce in bottom of 9x13 pan. Reserve 1/4 cup sauce
- Mix cream cheese & cinnamon sugar
- Spread cream cheese mixture on 6 slices of bread
- Top with another slice of bread
- Arrange "sandwiches" in 9x13 pan
- Pour remaining sauce on top of sandwiches. You might need to spread the sauce with a knife.
- Whip eggs & milk together.
- Pour over all bread.
- Bake 350, about 30-35 minutes
- Serve with a dollop of whipped cream, if you like
