Skinny Chicken Taco Recipe {Cinco de Mayo} - 2013-05-02 04:51:10-04
With Cinco de Mayo around the corner, I wanted to share a chicken taco recipe that even dieters can enjoy.
How so?
Instead of tortillas, you use lettuce leaves to hold your taco. Save all those calories.
If you don’t care about the calories, go ahead & use soft tortillas. No matter, these are good!

Ingredients
- Rub:
- 1 Tbsp cumin
- 1 Tbsp paprika
- 1 Tbsp chili powder
- Salsa:
- 1 can mandarin oranges, drained
- 1 cup cherry tomatoes, quartered
- 1 jalapeno, chopped finely or minced
- 1 Tbsp garlic powder
- 1/4 cup green onion, chopped
- 1/4 cup fresh cilantro, chopped
- 1 avocado, chopped
- 1 Tbsp olive oil
- chicken breast cut into bite size pieces
- green leaf lettuce
Instructions
- Mix together cumin, paprika, chili powder.
- Place chicken pieces in ziploc.
- Pour rub over chicken & squish together until chicken is coated with rub.
- Refrigerate overnight, or at least 3 hours
- Brown chicken in olive oil until done.
- Combine tomatoes, jalapeno, onion, garlic powder, cilantro to make salsa.
- Gently add avocado
- Season with salt & pepper
- To make tacos:
- Layer chicken & salsa on top of a lettuce leaf.
- I had guacamole to top off the taco. You can also add hot sauce.
Notes
If you don't want skinny chicken tacos, use flour or corn tortillas for your tacos.
