    St Patricks Day Recipes – Irish Soda Bread {Monday Meals} - 2014-03-17 11:00:00-04

   

A few weeks ago, I tried a new bread recipe.  I thought Irish Soda Bread would be one of a few St Patricks Day recipes to share with you.

If I made this again, I would cook it about 5 minutes less.  It wasn’t dry, but I’d like it to be a bit moist. I made this change in the recipe below.

St Patricks Day Recipes – Irish Soda Bread {Monday Meals}

St Patricks Day Recipes – Irish Soda Bread {Monday Meals}

Ingredients

  • 3 cups flour
  • 1 Tbsp baking powder
  • 1/3 cup sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 egg, lightly beaten
  • 2 cups buttermilk (sub: add 2 tsp vinegar to 2% milk)
  • 1/4 cup melted butter

Instructions

  1. Combine all dry ingredients
  2. Stir egg into buttermilk
  3. Make well of dry ingredients. Pour milk mixture and stir just until moistened
  4. Stir in melted butter
  5. Pour into sprayed (or floured) loaf pan
  6. Bake 325
  7. Start checking for doneness around 50 minutes by inserting toothpick into center until it comes out clean.
  8. I wouldn't bake more than 60-65 minutes.
