    Hot Fudge Pudding Cake – Valentines Day Desserts {Monday Meals} - 2015-02-16 06:54:17-05

   

Steve sang at a Benjamin Knox Wine Depot on Valentine’s night, so we didn’t have a regular Valentines.  When we got home on Saturday night, we had Hot Fudge Pudding Cake waiting for us as our Valentines Day Dessert. We took a few bites and saved the rest for our Sunday lunch dessert.

It was so rich, creamy & yummy. If you like chocolate, you’ll love this rich chocolate cake.

It’s so easy, your kids can make it.

I adapted the recipe from the 1988 Southern Living cookbook.  Enjoy!

Hot Fudge Pudding Cake – Valentines Day Desserts

Hot Fudge Pudding Cake – Valentines Day Desserts

Ingredients

  • 1/3 cup flour
  • 3/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup sugar
  • 1/3 cup chopped pecans
  • 1 Tbsp cocoa
  • 3 Tbsp milk
  • 1 Tbsp canola oil
  • 1/3 cup packed brown sugar
  • 1 Tbsp cocoa
  • 2/3 cup hot (not quite boiling) water

Instructions

  1. Combine first 6 ingredients
  2. Add milk & oil - stir well
  3. Spoon batter in an ungreased 1 quart casserole
  4. Combine brown sugar with 1 Tbsp cocoa
  5. Sprinkle brown sugar mixture over batter
  6. Pour hot water on top
  7. Bake 350 for 30 minutes.
  8. Serve with ice cream. We also added a chocolate covered strawberry as garnish
